Now, if you were to come on board as one of ourExecutive Chef, we-d ask you to do the following for us:
Supervise production personnel ensuring that approved ingredients, recipes and all relevant standards are adhered to including OHS, PPE and QA Standards.
Ensure food quality standards are met in terms of appearance, flavour, texture, freshness and presentation.
Control product flow, ensuring that food production is closely matched to volume demands and that adjustments are made as frequently as required in order to minimize run-outs and waste.
Complete daily production records and production forecasts.
Order product to required volumes from approved suppliers based on direction from their supervisor.
Ensure that budget targets are achieved in terms of product and labour costs for the department/locations thru the intensive application of a comprehensive cost control plan.
Ensure storage and handling of all product meets company, unit and client standards.
Take inventory of product using the approved procedures and at the times determined by unit reporting requirements and in compliance with their supervisor-s direction.
Ensure that inventories are completed on-time and are accurate in terms of quantity and pricing.
Develop and maintain product utilization plans and menu planning in conjunction with the General Manager.
Monitor and control the Trim Trax Waste Management System - implementation and management; ensure program is fully functional and all associates are properly trained in order to ensure integrity of reporting.
Handle associate training in proper production techniques and food safety for all areas of food production, including grille, deli, On the Go, bakery, catering, Menutainment and brands, etc. SMART or equivalent implementation, integration and maintenance of all electronic records.
Provide hands-on production (where possible and deemed necessary) in the event of staff shortages, short-notice events or catering events.
Execute high-end catering events for the clients including preparation and production of food for service.
Provide supervisory back-up during vacations and other times as deemed necessary including training in all facets.

You have at least three years of experience in high-volume food production; Red Seal certification would be an asset.
You have experience working for multiple-site locations.
You have supervisory experience.
You have excellent communications and customer relations.
You are eligible for high security clearance.
You have catering experience.
