Facilities are located within drill camps, mining camps, construction camps, pipeline camps, oil and gas installations and correctional facilities.

Now, if you were to come on board as aDirector of Culinary, we-d ask you to do the following for us:

  • Champion the Nutritious Life Program.

  • Act as -keeper of menu- - coordinate the development of menu cycles and recipes.

  • Defines presentation standards and ensures compliance.

  • Provide in-unit training for culinary programs.

  • Conduct special events at all locations to raise the culinary profile of ESS, including special tastings, chef-s tables or display cooking action stations.

  • Coordinate and support high profile catered functions.

  • Support implementation of Webtrition to ensure consistency and production management.

  • Identify and implement leading-edge back of house and front of house operational systems and procedures, including software and support technology, to ensure the professional delivery of food, service, guest satisfaction, cost control and HSE standards.

  • Confirm contract compliance and staff awareness of contractual obligations for the project.

  • Ensure all health and safety, and food safety issues are addressed and resolved promptly.

  • Ensure job specific and safety training of employees.

  • Maintain a clean and neat appearance.

  • Maintain good guest communications - be front-of-house and guest-facing during meal periods.

  • Maintain confidentiality of all company and client policies and procedures.

  • Conduct accident investigations and complete necessary documentation as needed.

  • Maintain superior product and service quality standards by conducting ongoing evaluations and investigating complaints; initiate corrective action.

  • Inspect kitchen equipment and appliances for needed repairs or maintenance.

  • Advise on purchasing with a focus on product quality and avoiding product shortages.

  • Ensure good order and maintenance of all equipment by immediately reporting any deficiencies to maintenance.

  • Monitor governmental permits, and ensure company and client compliance with all permitting requirements and government regulations.

  • Provide management with copies of any site specific procedures that have been developed in performance of duties.

  • Focus on process to deliver desirable QAQC outcomes.

  • Take accountability for labor and product cost.

Think you have what it takes to be our nextDirector of Culinary? We-re committed to hiring the best talent for the role. Here-s how we-ll know you will be successful:

  • You have at least 10 years of experience in fine cuisine and a diploma in food services management training (or equivalent culinary certificate); or equivalent combination of education and experience.

  • You must have Red Seal certification; CCC preferred or comparable Advanced Food Safety/HACCP training.

  • You have recent experience as an executive chef or as a sous chef.

  • You have broad and thorough knowledge of food and cooking techniques.

  • You have good managerial skills and basic knowledge of word processing and spreadsheets.
